Pink Velvet Cupcakes with Strawberry Philly icing

 On Friday I bought some Strawberry Philly (Philadelphia cream cheese) to try and because sales of it support Breast Cancer research…I came up with the idea to make pink velvet cupcakes with the Strawberry Philly (in place of the cream cheese) icing.

For the cakes
  1. 60g unsalted butter, at room temperature
  2. 150g caster sugar
  3. 1 egg, at room temperature
  4. 30g Strawberry Nessquick
  5. 2 tbsp pink food colouring
  6. 150g plain flour
  7. 140ml buttermilk
  8. 2 1/4 tsp baking powder
  9. 4 1/2 tsp white wine vinegar
For the icing
  1. 40g unsalted butter, at room temperature
  2. 100g Strawberry Philly cream cheese
  3. 250g pure icing sugar, sifted
To make the cupcakes
  1. Preheat the oven to 180°C (160°C fan forced) and line the muffin tin with muffin cases
  2. Add the butter and sugar to an electric mixer (or using a handheld mixer) and cream together for 7 minutes, or until light and fluffy.
  3. Add the egg and mix for 1 minute
  4. Mix the *Strawberry Nessquick and food colouring together in a separate bowl to make a paste, then add it to the mixer and mix until incorporated. Add the flour and buttermilk and mix for 2 minutes. Then add the baking powder and white wine vinegar and mix for a further 2 minutes.
  5. Divide evenly between the muffin cases. Bake for 20-25 minutes or until a skewer comes out clean.
  6. Remove the baked cupcakes from the oven and immediately transfer to a wire wrack to cool completely.
To make the icing
  1. Cream the butter and Strawberry Philly cream cheese together in the mixer for 2 minutes.
  2. Add the icing sugar and beat for about 2 minutes until smooth.
  3. Once the cupcakes are completely cool, spread the icing over the top of each one with a knife.
Notes
  1. Strawberry Philly cream cheese is only available during October (for breast cancer awareness month), so you could use regular cream cheese with strawberry flavouring, if you'd like.
  2. Don't be afraid to use the white wine vinegar, it reacts with the baking powder and makes the batter light and fluffy. You won't even know it's there, once the cupcakes are baked.
Tips
  1. I found that the Strawberry Philly is not as firm as regular cream cheese, so is not really suitable to be piped (learned the hard way with that one!)
  2. The Strawberry Nessquick was meant to substitute the cocoa in the Red velvet recipe, but it didn't really add a strawberry flavour. You could use white drinking chocolate (if you can find some)
  3. To jazz them up add some cute heart sprinkles or wafer hearts (as I have used)

There are many different variations of red velvet recipes are around and all would be able to be adapted into pink velvet cupcakes. I used the Red Velvet recipe in the Love bakery cook book.

Fun Fact: Cochineal comes from the Cochineal insect (sorry if this grosses you out!), it has and sometimes is still used in cosmetics too!

I also have some of the mini tubs, I think I might use some on some croissants. 50c from each tub or mini tubs of Strawberry Philly goes to the NBCF and Cancer research.

National Breast Cancer Awareness Month- My favourite Pink products

October is National Breast Cancer Awareness month, raising money to support the National Breast Cancer Foundation to find not only a cure, but also prevention of Breast cancer.

The NBCF’s vision is to achieve zero deaths from Breast cancer by 2030. They receive no government funding, so they must rely on the public’s support to fund research into finding prevention and a cure by the best scientists in Australia. Acording to the NBCF, 38 Australians are diagnosed each day and eight are losing their battle!

This cause really hits home with me, as my late grandmother was diagnosed with Breast cancer. I will always support the NBCF not only because of her, but also for future generations of women.

The funds raised in 2011 came to a total of $74, 931, 788! You can show your support by purchasing from a huge range of Pink merchandise or donating directly through the NBCF.

4. Limited Edition pink Volleys $35- I love Volleys! They are comfortable shoes at a reasonable price point. These limited edition pink pairs have the NBCF pink ribbon on the inside lining of them and have pretty pink heart laces too! $1 from each sale will be donated and they are available from Volley or possibly Target as well, but you will have to check your local Target store first.

5. Miss Ruby Legwear from $18 a pair- It may not be winter anymore, but if the weather is going to be as cold as it was yesterday in Melbourne, you are going to want a pair of tights to wear! 6. OPI Pink Of Hearts 2012 $24.95 for a set of 2 bottles- I  saw these sets in David Jones last week and they are such pretty shades! I will definitely be getting a set (even though I already own way too many polishes!) The set includes a light musk pink- ‘I Think In Pink’ and glittery pink- ‘You Glitter Be Good to Me’. 100% of profit from their sale goes to the NBCF! (how awesome is that? way to go OPI!). The set is available from David Jones stores, selected beauty salons and spas.
